To drink between 1995 and 2040

Ageing: 18 months in 100% French oak barrels

Food and Wine Pairing: The marriage between foie gras and wines from Château Coutet is recognized by all gastronomes. On the cheese side, the combination of the two "noble rots" — the penicilium roqueforti of Roquefort and the botrytis of Sauternes — is also an excellent choice; one can also mention pressed cooked cheeses such as Comté (24 months of ageing). Finally, fruit-based desserts will also pair very well with the sweet wines of Château Coutet.

Robert PARKER - The Wine Advocate
The 1990 Coutet is pale amber in color with lovely roasted nuts, crème caramel and preserved mandarin peel notes with hints of burnt toast, sandalwood, and lemon tart. The palate seems relatively dry and savory, with wonderful freshness and loads of spices coming though on the long finish.

Clean. Medium intensity. Reserved. More intense. Note of foam. Almond cream. Touch of caramel. New oak, rum (Nairac?). Clean. Medium intensity. Touch of pine wood resin. Rum baba. A bit of Scotch tape glue. Probably a little less liqueur-like than the others, it pleases with its tactile sweetness, the purity of flavor, with a touch of acacia in the mid-palate, flowers and white fruits. Very long, melting and airy persistence where the new oak reappears, imparting complex flavors of almond, nectarine and coconut. Delicious.

Jeff Leve - The Wine Cellar Insider
Probably sightly past full-maturity, the medium-bodied wine is taking on more orange notes in character. Still, you find honeyed pineapple, but the mango, orange rind and acidity is wining ground over the fruit. It is time to drink this before it drops more fruit.

Château Coutet
Château Coutet

Château Coutet is a Bordeaux wine estate located in the Barsac area. The Château has over 38 hectares of vineyards, mainly planted with Sémillon, Sauvignon Blanc and Muscadelle grape varieties. Coutet is a Premier Cru Classé of Sauternes in the Sauternes classification of classified growths.

As at Château d'Yquem, the old vertical presses are still in use and the must, after settling, is vinified in new barrels. Château Coutet produces a nectar of exceptional longevity. Under the direction of Marcel Baly since 1977, the wine has gained in liqueur richness, while maintaining its freshness and grace.

The best wines from the Château are the 1929 and 1949 vintages, the 1959 wines, the 1961 vintage, the 1989 vintage, the 1990 classified growths, 2000 grand cru wines and the young 2005 vintage.
