Robert PARKER - The Wine Advocate
Year in and year out, one of the three greatest Hermitages made is Chapoutier’s Le Pavillon. The black/blue-colored 2000 Ermitage Le Pavillon is brilliant out of bottle. Notes of graphite, ink, licorice, creme de cassis, and minerals jump from the glass of this syrup of Hermitage. Full-bodied, unctuously-textured, gorgeously rich, spectacularly concentrated and long, it is a tour de force in winemaking.

Dark ruby-red with violet reflections and a lighter rim. On the nose, hints of gunpowder, tobacco and liquorice, accompanied by black and purple berries. Floral and racy, almost slender on the palate, with perfectly integrated tannins. Dark berries define the firm and persistent yet full-bodied finish — a crystal-clear Syrah. Absolutely youthful, with great potential.

Surprisingly charming at a young age for Chapoutier. Vanilla, licorice, fresh cherries and black raspberry notes, tannins that had clearly softened and a fruit filled finish placed everything right where they were supposed to be. Still young, but fun to drink at this early stage.

Fantastic. A great Syrah, thick and rich and ripe, opulent and full-bodied, delivering layers of blackberry, subtle oak and toasty notes, some mineral, smoked bacon and grilled meat. Gorgeous finish. It's tempting now but will go on for a long time.

One of the Northern Rhône's most prestigious wines is complete, dense and lush, with tons of spice and sweet oak. It's not too heavy but it is definitely forward, and the fruit is pure, plummy and accented by amplified toast and coffee notes. Picks up character with every minute it's open, which means it should cellar well for several years.

Since 1808, the Chapoutier name has existed in the Rhone Valley. The distant ancestor Polydor Chapoutier was the first to start buying vineyards, thus moving from being a winemaker of an estate to becoming a winegrower, wine producer and merchant. The pioneering spirit was already inscribed in the family. Since 1990, Michel, in his forties, has been at the head of an exceptional vineyard. A land rich in history and traditions. Passionate about the expression of soils, Michel gives his convictions the means to flourish. Breaking choices, to succeed in synthesizing the past with his own audacity. History of time. As it goes for each element of nature. Time and earth. The roots, the vine and the fruit. From there was born all the richness and generosity of Maison M. Chapoutier.
